When I first started out I wish I understood that there is no rule book for baking sourdough!

What do I mean when I say that?

There is no single method or technique that will give you the perfect loaf. If you have a method that you’re happy with and produces a loaf you love, then that works! But if you don’t follow tried and true methods like taking the temperature of your bread or do coils and folds, your loaf might not be the best it could!

It truly is so relaxing 😈

It truly is so relaxing 😈

As a cottage baker, there are a ton of things that I make homemade and use in my products. The number one item that I make myself and use is vanilla extract. It’s so easy to use, tastes significantly better than the store bought stuff, plus it’s significantly cheaper!

All you need is a clean mason jar, vanilla bean pods (buy them at Costco!), and a quality vodka (the vanilla flavor is school soluble meaning it’s extracted by the alcohol).

If you make it, you’ll notice the difference! It also makes for a great holiday gift.

I was diagnosed with severe Celiac Disease as a teenager and began this crazy journey of being gluten free while navigating a limited supply of products at the time. As a result, I began baking and making my own gluten free versions of the things that I used to love (total carb freak growing up!).

Fast forward to this year and I decided to share my baking with the gluten-free community. As a result, I work in education by day, and run this micro-bakery by night, all with the support of my wife.
